Salad LeavesA few good things to add to a green salad - baby leaves or spinach from your fridge or food cupboard.

1. Wedges of Cheese
Almost all cheeses, either grated, in chunks or cubes can turn a salad into a more substantial dish. Crumbly cheese such as Caerphilly is good with watercress, spinach or rocket.

2. Toasted Nuts
Toasted nuts under the grill or in a hot pan for 1 minute gives a great crunch to a salad. Some of my favourites are pine nuts, hazelnuts, almonds and walnuts.

3. Croutons
Toss small cubes of bread either brown, white or granary in olive oil. Place on a baking sheet in a hot oven for 5-6 minutes then when cooked scatter over salad leaves. If liked try a few shavings of parmesan cheese over the top.

4. Quick Tasty Dressing
For a quick tasty dressing mix together 2 dsp olive oil and 1 dsp balsamic vinegar and 2 tsp honey. Add a hint of salt and freshly ground black pepper. Mix well together or shake in a screw top jar. Pour over salad leaves and serve straight away.

 5. As a main course dish
Mix together the salad leaves with slices of pan fried beef, bean sprouts, sesame seeds, chilli and toss with a light dressing of soy, ginger and olive oil.Back to Recipes
