
Basic Baked Potatoes
Ideally baked in the oven @ 400°F/200°C, on the top shelf for approximately 1 hour although cooking - time will vary with the size of the potatoes.
For a delicate crisp skin rub each potato with 1 tsp olive oil or butter.
When cooked use a cloth to grasp each potato, cut lengthwise through the top to reach halfway through its depth. Press in the sides to force open then fill with your favourite filling. Try:-
Sliced mushroom, lightly cooked in a little butter with fresh herbs and mix with a little cooked crisp crumbly bacon
Try adding a little softened butter mixed with crumbled cheese and half a finely chopped red onion.
Diced tomatoes mixed with crumbled feta cheese, fresh basil and a little pesto on top.
For a gourmet baked potato then try baking a sweet potato and when cooked fill with softened butter mixed with a little green chilli, clove of garlic chopped and a little coriander cooked for only one minute in a fry pan with 1 dsp olive oil. Top with freshly ground black pepper.
Baked potatoes go with just about anything so add your favourite topping and enjoy
