
Mediterranean Oven Roasted Vegetables
1. Cooking and Serving Suggestions
Pour over a little olive oil and place foil tray on the barbeque. Cook, heat and toss occasionally to cook through. Alternatively cook the vegetables separately on the grill of the barbecue on their own or place in foil parcels season, close and fold over and cook for 8-10 minutes over a high heat.
2. Add a jar of tomato sauce and simmer gently for 8-10 minutes for a quick vegetarian vegetable stew or ratatouille by adding a few black olives and an extra dash of olive oil. Great if you add a few chopped herbs such as rosemary as included in the Willowbrook pack or for a more summery feel add a little chopped basil, coriander or flat leaf parsley.
3. Oven-grill the vegetables and use to top warm crusty bread such as ciabatta or soda bread. Spread a little sun-dried tomato paste or pesto over the bread after coking before topping with char-grilled Mediterranean vegetables.
